In homage to pancake day I thought I would share my vegan pancake recipe. I know what you’re thinking, pancake day was nearly two months ago now. Yes, I’m a little late, but pancakes are always a good idea! And when I say my vegan pancake recipe I mean my brother’s because he always makes the pancakes around here. It’s lucky there’s even a picture to go with this post because I LOVE pancakes and could barely wait to shove this one in my mouth.
The Ingredients
1 medium banana
1 cup plain flour
1 1/4 cup plant milk
1 tablespoon Golden Syrup or sugar
2 tbsp baking powder
Coconut oil
The Method
Blend the banana, milk, sugar/syrup together first. Once mixture is smooth mix in flour and baking powder. Melt a little coconut oil in a frying pan on a medium heat and add 1/4 cup of the mixture. Fry until solid enough to flip, then fry the other side. Pro-tip – wack a load of blueberries in if you’re feeling fruity.
The Topping
Whatever you like. My favourites are classic lemon and sugar, fresh berries, biscoff spread or a vegan Nutella alternative.
